Cowboy Caviar


This week the theme for Ultimate Recipe Swap over at Life as a Mom is Superbowl food, so I thought I'd share one of my favorite party recipes. This makes a giant bowl of delicious, healthy, and beautiful bean salsa for your football fans (or for those who just came for the food). Feel free to alter the recipe based on what you have in your pantry, what is on sale at the store, or your family's tastes.

Cowboy Caviar

1 15 oz can hominy -- drained
1 15 oz can black eyed peas -- drained and rinsed
1 15 oz can kidney beans
1 15 oz can black beans
1 15 oz can white corn
1 large of each green, red, and yellow peppers -- chopped
2 large tomatoes with garlic & onion -- chopped
1 red onion -- diced
1 4.5 oz jar garlic
1 8 oz bottle vinaigrette dressing
1 bunch cilantro -- finely chopped

Combine all the ingredients. Toss and chill, covered, overnight.

Serve with tortilla or corn chips.
